Is it possible to add a Zero Goal to the donation tracker, so that no limit is set, and the amount of donations is just recorded without a target amount?

You can view development of the new Donation Tracker here. To be honest the whole Donation Tracker is designed to track the status of a goal. But I've saved your suggestion and will take a closer look if your suggestion can be included.
